Stir Fry vegetables are another favorite and easy recipe that is a hit at our house. It is versatile: dependent on what vegetables are in season or what is available in the house. Try this recipe for a delicious and easy whole food plant based fix.

INGREDIENTS
3 mini peppers-seeded and chopped
1 cup mushrooms sliced
2 cups broccoli
1 medium onion-chopped
1 medium zucchini-sliced thin
1 carrot- diagnolly sliced thin
3 cloves of garlic-minced
1/4 cup soy sauce
2 tbs maple syrup
1/2 cup vegetable broth
1 tablespoon of cornstarch
INSTRUCTIONS
1 In a large skillet add 2 tbs of vegetable broth over medium heat. Add onions, bell pepper, carrots, mushrooms, zucchini and broccoli. Saute for 3-5 minutes or until veggies are tender. Add additional liquid to prevent sticking.
2 In a small bowl, whisk together soy sauce, garlic, maple syrup, remaining vegetable broth and cornstarch.
3 Pour over veggies and cook until the sauce has thickened.
4 Serve over rice.
